Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a large mixing bowl, combine the cottage cheese, eggs, honey, and vanilla extract until well mixed.
- Add the almond flour, baking powder, and salt to the mixture. Stir until smooth.
- Gently fold in the fresh blueberries, reserving a few for topping.
- Pour the mixture into the prepared baking dish and spread evenly.
- Top with the reserved blueberries.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool slightly before serving. Enjoy warm or chilled!
