Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Unroll the pastry dough and cut each sheet into 6 equal squares.
- In a mixing bowl, combine sliced sausage, red and green bell peppers, grated cheddar cheese, salt, black pepper, red pepper flakes, dried mint, and thyme.
- Place a heaping tablespoon of the mixture into the center of each pastry square.
- Fold the edges of each square slightly inward to encapsulate the filling, leaving the center exposed.
- Arrange the pastries on the prepared baking sheet, leaving space between each one.
- Bake for 25 minutes or until the pastries are golden brown and the cheese is bubbly.
- Remove from the oven and let cool for a few minutes before serving.
