Instructions
- Season the shrimp with salt and pepper to taste.
- Lay a spring roll wrapper on a clean surface, and place two shrimp in the center.
- Add a generous amount of shredded mozzarella cheese on top of the shrimp.
- Roll the wrapper tightly around the shrimp and cheese, sealing the edges with beaten egg.
- Repeat the process with the remaining wrappers and ingredients.
- Heat vegetable oil in a frying pan over medium heat.
- Carefully place the rolls in the hot oil and fry until golden brown, about 2-3 minutes on each side.
- Remove the rolls from the oil and drain on paper towels.
- Sprinkle with chopped parsley and serve immediately with your favorite dipping sauce.
