Instructions
- Preheat your oven to 180°C (350°F). Grease a baking dish or pan with some melted butter.
- In a mixing bowl, combine the crumbled feta cheese, eggs, yogurt, and baking soda. Mix well and add salt to taste, ensuring the mixture is smooth and well incorporated.
- Lay one sheet of phyllo dough in the baking dish and brush lightly with melted butter. Repeat with a few more sheets.
- Spoon some of the cheese mixture evenly over the phyllo layers. Cover with another layer of phyllo sheets, brushing each one with butter. Repeat the process until all the cheese mixture and phyllo sheets are used, finishing with a phyllo layer brushed with butter.
- Bake the Banitsa in the preheated oven for about 40 minutes, or until the top is golden brown and crispy.
- Once done, remove from the oven and let it cool for a few minutes before cutting into squares. Serve warm and enjoy!

- Keep the phyllo sheets covered with a damp cloth to prevent drying while assembling.
- You can add spinach or leeks for a flavorful variation.
- Serve with a dollop of yogurt on the side for a classic touch.
