Instructions
- Preheat your air fryer to 375°F (190°C).
- In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, egg, flour, garlic powder, thyme, salt, and pepper. Mix until well combined.
- Lightly grease a muffin tin with cooking spray.
- Spoon the potato mixture into the muffin tin, filling each cup about three-quarters full and smoothing the tops with a spatula.
- Place the muffin tin in the air fryer basket.
- Cook for 18-20 minutes, or until the tops are golden brown and crispy.
- Carefully remove the potato puffs from the air fryer and let them cool for a few minutes before removing them from the muffin tin.
- Garnish with fresh parsley and serve warm.
