Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash the sweet potatoes thoroughly and pat dry. Pierce each sweet potato several times with a fork.
- Place the sweet potatoes on the prepared baking sheet and brush lightly with olive oil.
- Bake for 45-50 minutes or until the sweet potatoes are tender when pierced with a fork.
- While the potatoes are baking, mix the cottage cheese with dill, green onions, paprika, salt, and pepper in a bowl.
- Remove the sweet potatoes from the oven and let them cool slightly. Cut them in half lengthwise and scoop out some of the flesh, leaving a small border.
- Fill each sweet potato half with the cottage cheese mixture.
- Return the stuffed sweet potatoes to the oven and bake for an additional 5-10 minutes, until the cheese is slightly golden.
- Garnish with additional dill and green onions if desired, and serve warm.

- For extra flavor, add a pinch of garlic powder to the cottage cheese mixture.
- Try topping with some shredded cheese for a cheesy crust.
- For a spicy kick, add some red pepper flakes to the mix.
