Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the sweet potatoes thoroughly and pat dry. Pierce each sweet potato several times with a fork.
  3. Place the sweet potatoes on the prepared baking sheet and brush lightly with olive oil.
  4. Bake for 45-50 minutes or until the sweet potatoes are tender when pierced with a fork.
  5. While the potatoes are baking, mix the cottage cheese with dill, green onions, paprika, salt, and pepper in a bowl.

  8. Return the stuffed sweet potatoes to the oven and bake for an additional 5-10 minutes, until the cheese is slightly golden.
  9. Garnish with additional dill and green onions if desired, and serve warm.
