Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
- In a large mixing bowl, combine the cottage cheese, eggs, flour, sugar, baking powder, vanilla extract, and salt.
- Mix the ingredients together until well combined and the batter is smooth.
- Spoon the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.
- Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and allow to cool slightly before transferring the muffins to a wire rack.
- Serve warm, or store in an airtight container for up to 3 days.
