Instructions
- Heat a large skillet over medium heat and lightly spray it with cooking spray or use olive oil.
- Place one tortilla in the skillet and evenly sprinkle 1/4 cup of mozzarella cheese over it.
- Arrange pepperoni slices over the cheese and sprinkle a bit more cheese on top.
- Cover with another tortilla and press down gently.
- Cook for 2-3 minutes until the bottom tortilla is golden brown, then carefully flip the quesadilla.
- Cook the other side for another 2-3 minutes, or until golden brown and the cheese has fully melted.
- Remove from the skillet and let it cool slightly before cutting into wedges.
- Garnish with chopped parsley if desired, and serve with marinara sauce for dipping.
