- In a large mixing bowl, combine the cottage cheese and pizza sauce thoroughly.
- Add the shredded mozzarella cheese, whole wheat flour, and baking powder to the bowl, stirring until well mixed.
- Fold in the mini pepperoni, chopped bell peppers, mushrooms, Italian seasoning, salt, and pepper. Mix until evenly distributed.
- Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full.
