  1. Preheat the air fryer to 360°F (180°C) and lightly grease an air fryer-safe baking dish.
  2. Heat olive oil in a pan and sauté mushrooms for 3–4 minutes until softened and slightly golden.
  3. In a bowl, whisk together eggs, milk, salt, and black pepper until well combined.
  4. Layer half of the sliced potatoes in the baking dish.
  5. Add shredded chicken, sautéed mushrooms, and cherry tomatoes evenly over the potatoes.
  6. Sprinkle a layer of grated cheese on top.
  7. Add the remaining potato slices and pour the egg mixture evenly over everything.
  8. Top with the remaining cheese.
  9. Place in the air fryer and cook for 22–25 minutes until set, golden, and slightly crispy on top.
  10. Let cool for 5–10 minutes before slicing and serving.
