- Preheat the air fryer to 320°F (160°C) and line an air fryer-safe baking dish with parchment paper.
- In a large bowl, mix cottage cheese, honey, lemon juice, lemon zest, and vanilla extract until smooth.
- Stir in rolled oats, baking powder, and salt until fully combined.
- Gently fold in blueberries and chopped nuts if using.
- Pour the batter into the prepared dish and spread evenly.
- Place in the air fryer and cook for 20–25 minutes, or until set and lightly golden.
- Remove and allow to cool completely before slicing into 12 bars.
- Store in an airtight container in the refrigerator for up to 1 week.
