  1. Preheat the air fryer to 320°F (160°C) and line an air fryer-safe baking dish with parchment paper.
  2. In a large bowl, mix cottage cheese, honey, lemon juice, lemon zest, and vanilla extract until smooth.
  3. Stir in rolled oats, baking powder, and salt until fully combined.
  4. Gently fold in blueberries and chopped nuts if using.
  5. Pour the batter into the prepared dish and spread evenly.
  6. Place in the air fryer and cook for 20–25 minutes, or until set and lightly golden.
  7. Remove and allow to cool completely before slicing into 12 bars.
  8. Store in an airtight container in the refrigerator for up to 1 week.
