- Preheat the air fryer to 320°F (160°C) and line an air fryer-safe 8×8-inch pan or small baking dish with parchment paper.
- In a blender or food processor, combine cottage cheese, honey, vanilla extract, and egg. Blend until smooth and creamy.
- Transfer the mixture to a bowl and fold in almond flour, chopped almonds, and blueberries until evenly combined.
- Pour the batter into the prepared dish and spread evenly.
- Place the dish in the air fryer and cook for 20–25 minutes, or until the center is set and edges are lightly golden.
- Remove and let cool completely before slicing into 12 bars.
- Store in the refrigerator for up to 5 days or freeze for longer storage.
