  1. Spread the sliced onion and minced garlic evenly across the bottom of the slow cooker.
  2. Place the chuck roast directly on top of the onion and garlic layer.
  3. Pour the beef broth, beef consomme, and soy sauce over the roast, ensuring it is well covered.
  4. Cover and cook on LOW for 8 hours, or until the beef is extremely tender and easily shreds with a fork.
  5. Remove the beef from the slow cooker and shred it using two forks.
  6. Lightly toast the hoagie rolls in the oven to help prevent sogginess.
  7. Pile the shredded beef onto each roll and top with a slice of provolone cheese.
  8. Broil the sandwiches briefly until the cheese is melted and bubbly.
  9. Serve with small bowls of the warm jus from the slow cooker for dipping.
