- Spread the sliced onion and minced garlic evenly across the bottom of the slow cooker.
- Place the chuck roast directly on top of the onion and garlic layer.
- Pour the beef broth, beef consomme, and soy sauce over the roast, ensuring it is well covered.
- Cover and cook on LOW for 8 hours, or until the beef is extremely tender and easily shreds with a fork.
- Remove the beef from the slow cooker and shred it using two forks.
- Lightly toast the hoagie rolls in the oven to help prevent sogginess.
- Pile the shredded beef onto each roll and top with a slice of provolone cheese.
- Broil the sandwiches briefly until the cheese is melted and bubbly.
- Serve with small bowls of the warm jus from the slow cooker for dipping.
