- Heat your oven to 190Β°C/fan 170Β°C/gas 5.
- Put the carrots, celery and onion in a large pan with the herbs and stock. Season lightly, bring to the boil, reduce the heat, cover and simmer gently for 5-6 minutes.
- Spread the sausages out on a non-stick baking sheet, spray with low-calorie cooking spray and bake for 15-20 minutes, until cooked through. Cut into thick diagonal slices.
- Halve the mushrooms and add to the vegetables with the sausages, tomatoes and sweetener. Season lightly, transfer to an ovenproof dish and bake for 10-12 minutes, until bubbling. Serve with carrot and swede mash to keep it Extra Easy SP, or a jacket potato or cooked plain rice.
