  1. Heat your oven to 190Β°C/fan 170Β°C/gas 5.
  2. Put the carrots, celery and onion in a large pan with the herbs and stock. Season lightly, bring to the boil, reduce the heat, cover and simmer gently for 5-6 minutes.
  3. Spread the sausages out on a non-stick baking sheet, spray with low-calorie cooking spray and bake for 15-20 minutes, until cooked through. Cut into thick diagonal slices.
  4. Halve the mushrooms and add to the vegetables with the sausages, tomatoes and sweetener. Season lightly, transfer to an ovenproof dish and bake for 10-12 minutes, until bubbling. Serve with carrot and swede mash to keep it Extra Easy SP, or a jacket potato or cooked plain rice.
