Air Fryer Eggplant Lasagna

Instructions

Step 1: Prepare the Eggplant
  1. Slice eggplant into long sheets. Lightly salt and let sit 10 minutes to release moisture.
  2. Pat dry, brush with olive oil, and air fry at 375°F (190°C) for 8–10 minutes until softened.
Step 2: Cook the Meat Sauce
  1. In a skillet, cook ground beef with onion until browned.
  2. Add garlic, salt, pepper, and Italian seasoning; cook 1 minute.
  3. Stir in marinara sauce and simmer 3–5 minutes.
Step 3: Mix the Ricotta Layer
  1. In a bowl, combine ricotta, egg, and 1 tbsp parsley.
Step 4: Assemble the Lasagna
  1. Grease an 8×8 dish that fits in your air fryer.
  2. Spread a thin layer of meat sauce on the bottom.
  3. Add a layer of eggplant slices.
  4. Spread ricotta mixture on top.
  5. Sprinkle mozzarella and Parmesan.
  6. Repeat until the dish is full, finishing with a thick cheese layer.
Step 5: Air Fry
  1. Preheat air fryer to 350°F (175°C).
  2. Air fry for 20–25 minutes until the cheese is golden, bubbly, and browned like the picture.
  3. Let rest 10 minutes, then cut into 9 squares.
