Instructions
Step 1: Cook the Tortellini
- Bring a large pot of salted water to a boil.
- Cook tortellini according to package directions until al dente. Drain and set aside.
Step 2: Cook the Chicken
- Season chicken with Cajun seasoning, garlic powder, salt, and pepper.
- In a skillet, heat olive oil over medium-high heat.
- Sear chicken pieces until golden brown and cooked through (internal temp 165°F). Remove and set aside.
Step 3: Make the Alfredo Sauce
- In the same skillet, melt butter and add heavy cream.
- Simmer gently for 3–4 minutes, stirring often.
- Add Velveeta cubes, Parmesan, and Italian seasoning. Whisk until smooth and creamy.
Step 4: Combine
- Add cooked tortellini to the skillet and toss to coat in the sauce.
- Top with shredded mozzarella and stir until melted.
Step 5: Serve
- Plate tortellini with Cajun Alfredo cream.
- Arrange garlic Cajun chicken on the side or on top.
- Garnish with parsley and extra Parmesan if desired.
