Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook linguine according to package instructions until al dente. Drain and set aside.
Step 2: Prepare the Chicken
- Cut chicken breasts into bite-sized chunks or strips.
- Season generously with Cajun seasoning, salt, and pepper.
- In a skillet, heat olive oil over medium-high heat and cook chicken until golden and fully cooked (about 6–8 minutes). Remove and set aside.
Step 3: Make the Alfredo Sauce
- In the same skillet, melt butter and sauté garlic until fragrant.
- Pour in heavy cream and bring to a gentle simmer.
- Stir in Velveeta cubes, mozzarella, and Parmesan. Whisk until smooth and creamy.
Step 4: Combine & Serve
- Add the cooked chicken back into the sauce and simmer for 2 minutes.
- Toss cooked linguine with the cheesy Cajun Alfredo sauce until well coated.
- Garnish with fresh parsley and extra Parmesan before serving.
