Step 1: Prepare the Pan
  1. Preheat oven to 325°F (165°C). Grease a loaf pan or bundt pan well.
  2. Pour melted butter and brown sugar into the pan, spreading evenly.
  3. Arrange pineapple slices on top of the mixture.
Step 2: Make the Batter
  1. In a large bowl, beat softened butter, cream cheese, and sugar until fluffy.
  2. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. Gradually add dry ingredients to the wet mixture, mixing until smooth.
  5. Stir in vanilla and crushed pineapple.
Step 3: Bake
  1. Pour batter evenly over the pineapple topping in the prepared pan.
  2. Bake at 325°F for 75–90 minutes, or until a toothpick comes out clean.
  3. Let cake cool in the pan for 15 minutes before flipping onto a serving plate.
