Instructions
Step 1: Prepare the Pan
- Preheat oven to 325°F (165°C). Grease a loaf pan or bundt pan well.
- Pour melted butter and brown sugar into the pan, spreading evenly.
- Arrange pineapple slices on top of the mixture.
Step 2: Make the Batter
- In a large bowl, beat softened butter, cream cheese, and sugar until fluffy.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until smooth.
- Stir in vanilla and crushed pineapple.
Step 3: Bake
- Pour batter evenly over the pineapple topping in the prepared pan.
- Bake at 325°F for 75–90 minutes, or until a toothpick comes out clean.
- Let cake cool in the pan for 15 minutes before flipping onto a serving plate.
Step 4: Optional Cream Cheese Filling
- For extra decadence, swirl sweetened cream cheese mixture into the batter before baking.
