Honey Butter Sweet Potato Cornbread

Step 1: Prepare the Batter
  1. Preheat oven (or air fryer) to 375°F (190°C). Grease an 8×8-inch baking dish or pan that fits in your air fryer.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. In another bowl, mix mashed sweet potatoes, honey, eggs, milk, and melted butter until smooth.
  4. Combine wet and dry ingredients, stirring gently until just mixed.
Step 2: Bake
  1. Pour batter into the prepared dish.
  2. Oven: Bake for 25–30 minutes, until golden and a toothpick comes out clean.
  3. Air Fryer: Bake at 330°F (165°C) for 20–25 minutes, checking for doneness.
Step 3: Finish & Serve
  1. Brush warm cornbread with melted butter and drizzle lightly with extra honey.
  2. Serve warm with a dollop of whipped butter or cream.
