Instructions
Step 1: Prepare the Batter
- Preheat oven (or air fryer) to 375°F (190°C). Grease an 8×8-inch baking dish or pan that fits in your air fryer.
- In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
- In another bowl, mix mashed sweet potatoes, honey, eggs, milk, and melted butter until smooth.
- Combine wet and dry ingredients, stirring gently until just mixed.
Step 2: Bake
- Pour batter into the prepared dish.
- Oven: Bake for 25–30 minutes, until golden and a toothpick comes out clean.
- Air Fryer: Bake at 330°F (165°C) for 20–25 minutes, checking for doneness.
Step 3: Finish & Serve
- Brush warm cornbread with melted butter and drizzle lightly with extra honey.
- Serve warm with a dollop of whipped butter or cream.
