Instructions

Step 1: Prepare the Mixture
  1. In a large bowl, combine grated cassava, brown sugar, grated coconut, coconut milk, salt, and vanilla. Mix until well combined.
Step 2: Grease the Molds
  1. Brush puto molds or muffin cups with melted butter. Optional: line bottoms with banana leaves for aroma and easy release.
Step 3: Steam or Air Fry
  1. Spoon the cassava mixture into the molds, filling about 3/4 full.
  2. To Steam: Place molds in a steamer and steam for 25–30 minutes or until firm and tops are translucent.
  3. To Air Fry: Cover filled molds with foil and place in the air fryer at 320°F (160°C). Add a small pan of water to help steam. Cook for 20–25 minutes or until set and slightly golden.
Step 4: Cool and Unmold
  1. Let cool slightly before removing from molds. Invert to serve with the caramelized side up.
  2. Optional: Brush with melted butter or sprinkle with extra coconut or latik.
