- Slowly pour in cold club soda and whisk until a smooth, lump-free batter forms.
- Let the batter rest for 5 minutes while you prep the protein.
Step 2: Coat and Cook
- Pat fish fillets or chicken tenders dry with paper towels.
- Dip each piece into the batter, coating it evenly.
- Fry in hot oil (350°F / 175°C) until golden brown and crispy, about 4–6 minutes depending on thickness.
- Drain on paper towels and serve hot.
