Instructions
Step 1: Sauté Vegetables
- In a large pot over medium heat, sauté onion, carrots, and celery until softened, about 5–7 minutes.
Step 2: Add Potatoes and Broth
- Add diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
Step 3: Thicken the Soup
- In a small bowl, whisk flour with milk until smooth. Slowly stir into the soup.
- Add heavy cream, and continue to cook on low for 5–7 minutes until thickened.
Step 4: Add Final Touches
- Stir in crumbled bacon, cheese, parsley, salt, and pepper. Mix until cheese melts completely.
- Adjust seasoning if needed. Serve hot and enjoy!
