Ingredients
- 6 medium russet potatoes, diced into small pieces
- 1 onion, sliced
- 3 carrots, peeled and sliced
- 3 stalks celery, chopped
- 6 pieces of bacon, cooked and crumbled
- 8 cups vegetable or chicken broth
- 1/4 cup milk
- 1/3 cup heavy cream
- 1 tsp parsley, minced
- Salt and pepper to taste
- 3 tbsp flour (or use cornstarch as a replacement)
- 1 cup cheese, finely grated (cheddar recommended)
