Instructions
Step 1: Make the Cake
- Preheat oven to 350°F (175°C). Grease and line an 8-inch round or loaf cake pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, whisk together sugar, yogurt, oil, eggs, and vanilla until smooth.
- Add the dry ingredients to the wet and stir until just combined. Do not overmix.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Step 2: Prepare the Frosting
- Beat cream cheese until smooth. Add Greek yogurt, powdered sugar, and vanilla.
- Mix until creamy and fluffy. Adjust sugar to your preferred sweetness.
Step 3: Frost and Garnish
- Once the cake is completely cool, spread frosting evenly over the top.
- Garnish with fresh strawberries if desired.
