Instructions
Step 1: Prepare the Filling
- In a bowl, mix cream cheese, spinach, parmesan, garlic, salt, and pepper until well combined.
Step 2: Flatten and Fill Chicken
- Butterfly each chicken breast and pound to an even thickness.
- Spread 1–2 tablespoons of the filling on each breast and roll tightly.
- Secure with twine or toothpicks.
Step 3: Sear and Roast
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium-high heat and sear each roulade until golden on all sides (about 5 minutes).
- Transfer to a baking dish and roast in the oven for 20–25 minutes, or until internal temperature reaches 165°F (74°C).
Step 4: Serve
- Let rest 5 minutes, then slice and serve with roasted veggies or mash.
