Stuffed chicken roulade mid week roast

Instructions

Step 1: Prepare the Filling
  1. In a bowl, mix cream cheese, spinach, parmesan, garlic, salt, and pepper until well combined.
Step 2: Flatten and Fill Chicken
  1. Butterfly each chicken breast and pound to an even thickness.
  2. Spread 1–2 tablespoons of the filling on each breast and roll tightly.
  3. Secure with twine or toothpicks.
Step 3: Sear and Roast
  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium-high heat and sear each roulade until golden on all sides (about 5 minutes).
  3. Transfer to a baking dish and roast in the oven for 20–25 minutes, or until internal temperature reaches 165°F (74°C).
Step 4: Serve
  1. Let rest 5 minutes, then slice and serve with roasted veggies or mash.
