Instructions
Step 1: Roast the Beef
- Preheat oven to 375°F (190°C).
- Rub beef with salt, pepper, and olive oil. Sear in a pan on all sides until browned.
- Roast for 50–60 minutes, or until desired doneness. Let rest 10 minutes before slicing.
Step 2: Prepare the Vegetables
- Boil potatoes until soft. Mash with butter, milk, salt, and pepper.
- Steam carrots, peas, cauliflower, broccoli, and cabbage until tender (about 5–10 minutes).
Step 3: Yorkshire Puddings
- Prepare or heat Yorkshire puddings according to package or recipe instructions.
Step 4: Serve
- Plate slices of roast beef with a scoop of mashed potatoes and a portion of each vegetable.
- Add two Yorkshire puddings and drizzle with hot gravy.
