Instructions
Step 1: Sauté the Aromatics
- Heat olive oil in a large skillet over medium heat.
- Add onion and sauté until soft, about 4 minutes.
- Stir in garlic, ginger, and bell pepper. Cook for 2–3 minutes.
Step 2: Cook the Chicken
- Add chicken pieces to the skillet. Season with salt, pepper, paprika, and cayenne.
- Cook until lightly browned on all sides, about 6–8 minutes.
Step 3: Simmer in Coconut Sauce
- Stir in tomato paste and coconut milk. Bring to a gentle boil.
- Reduce heat and simmer uncovered for 10–12 minutes until sauce thickens and chicken is fully cooked.
- Squeeze in lime juice and stir to combine.
Step 4: Serve
- Serve hot over cooked rice and garnish with chopped fresh cilantro.
