Step 1: Cook the Chicken
  1. Heat butter or oil in a large skillet over medium heat.
  2. Add diced chicken, season with salt and pepper, and cook until browned and cooked through. Remove and set aside.
Step 2: Sauté and Simmer
  1. In the same skillet, sauté onion and garlic until translucent.
  2. Add rice and stir for 1 minute to coat.
  3. Pour in chicken broth and milk. Bring to a simmer.
  4. Cover and cook on low for 18–20 minutes, stirring occasionally, until rice is tender.
Step 3: Combine and Serve
  1. Stir in cooked chicken, cheese, and optional peas or spinach.
  2. Simmer for a few minutes until heated through and creamy.
  3. Serve warm and enjoy!
