Instructions
Step 1: Sauté the Sausage and Onion
- In a large skillet or Dutch oven, heat olive oil or butter over medium heat.
- Add the sliced sausage and brown for 4–5 minutes. Remove and set aside.
- In the same pan, add the chopped onion and sauté until softened, about 3–4 minutes.
Step 2: Combine Ingredients
- Add garlic, potatoes, sauerkraut, chicken broth, salt, pepper, and caraway seeds (if using).
- Return the sausage to the pot and mix everything well.
Step 3: Simmer
- Cover and simmer over low-medium heat for 30–35 minutes, or until the potatoes are fork-tender.
Step 4: Serve
- Taste and adjust seasoning if needed. Serve hot and enjoy!
