Step 1: Prepare the Filling
- In a large bowl, mix shredded chicken, cream cheese, sour cream, 1 cup shredded cheese, garlic powder, cumin, salt, and pepper until well combined.
Step 2: Assemble the Enchiladas
- Warm tortillas slightly to make them pliable. Spoon the filling into each tortilla and roll tightly.
- Place seam-side down in a greased, air fryer-safe dish or tray that fits your air fryer basket.
- Pour enchilada sauce over the top and sprinkle with extra cheese.
Step 3: Air Fry
- Preheat the air fryer to 180°C (350°F).
- Air fry for 10–12 minutes or until the cheese is melted and bubbly and the tortillas are slightly crispy.
- Garnish with cilantro and green onions before serving, if desired.
