Step 1: Prepare the Batter
- In a bowl, whisk together eggs and sugar until light and foamy.
 - Add in pineapple, coconut milk, melted butter, and vanilla. Mix well.
 - Stir in flour, baking powder, and salt until just combined. Fold in shredded coconut.
 
Step 2: Air Fry
- Grease and line a cake pan that fits your air fryer.
 - Pour the batter into the pan and level the top.
 - Preheat the air fryer to 160°C (320°F). Air fry for 25–28 minutes or until a toothpick inserted comes out clean.
 - Let it cool before slicing. Optionally, top with whipped cream or a sprinkle of coconut.
