Air Fryer Homemade Fruit Cake

Step 1: Prepare the Batter
  1. Preheat the air fryer to 160°C (320°F).
  2. In a bowl, whisk eggs and brown sugar until light and creamy.
  3. Add in melted butter, orange juice, and vanilla extract. Mix well.
  4. Sift in flour, baking powder, and baking soda. Stir until just combined.
  5. Toss chopped dried fruits and nuts with 1 tbsp flour, then fold into the batter.
Step 2: Air Fry
  1. Line a cake pan that fits your air fryer with parchment paper and lightly grease it.
  2. Pour the batter into the pan and smooth the top.
  3. Air fry for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  4. Let it cool completely before slicing. Enjoy warm or chilled.
