Step 1: Prepare the Batter
- Preheat the air fryer to 160°C (320°F).
- In a bowl, whisk eggs and brown sugar until light and creamy.
- Add in melted butter, orange juice, and vanilla extract. Mix well.
- Sift in flour, baking powder, and baking soda. Stir until just combined.
- Toss chopped dried fruits and nuts with 1 tbsp flour, then fold into the batter.
Step 2: Air Fry
- Line a cake pan that fits your air fryer with parchment paper and lightly grease it.
- Pour the batter into the pan and smooth the top.
- Air fry for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool completely before slicing. Enjoy warm or chilled.
