Vegan Luscious Cream Cheesecake

Instructions

Step 1: Make the Crust
  1. In a bowl, combine graham cracker crumbs, melted coconut oil, and maple syrup.
  2. Press into the bottom of a lined springform pan. Place in the freezer to set while making the filling.
Step 2: Prepare the Cheesecake Filling
  1. In a high-speed blender or food processor, blend soaked cashews, coconut cream, lemon juice, maple syrup, melted coconut oil, vanilla, and salt until smooth and creamy.
  2. Pour the filling over the chilled crust and smooth the top.
  3. Refrigerate for at least 4–6 hours, or until firm (overnight is best).
Step 3: Add Toppings & Serve
  1. Once set, remove the cheesecake from the pan and top with fresh fruit and optional whipped cream.
  2. Slice and serve chilled.
