Instructions
Step 1: Make the Batter
- In a bowl, mix cornmeal, flour, baking powder, salt, and sugar.
- Whisk in the buttermilk and egg until a thick batter forms. Let sit for 5 minutes.
Step 2: Fry the Hoecakes
- Heat 1-2 tbsp of oil or butter in a skillet over medium heat.
- Spoon about 2 tablespoons of batter per hoecake into the skillet. Flatten slightly.
- Cook until bubbles form and edges are golden, about 2-3 minutes per side.
Step 3: Serve
- Serve warm with butter, honey, or alongside collard greens and beans.
