Step 1: Prepare the Batter
- In a mixing bowl, combine mashed banana, eggs, flax seed, and vanilla extract. Mix until smooth.
Step 2: Cook the Pancakes
- Heat 1 tablespoon of coconut oil in a nonstick skillet over medium heat.
- Pour small circles of batter into the pan (about 2 tablespoons each).
- Cook for 2–3 minutes until bubbles form on the surface, then flip and cook another 1–2 minutes until golden.
- Repeat with remaining batter, adding more oil as needed.
