Step 1: Prepare the Batter
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix milk, egg, melted butter, and vanilla. Pour wet ingredients into dry and stir until just combined.
Step 2: Cook the Mini Pancakes
- Heat a non-stick pan over medium heat. Lightly grease with oil or butter.
- Drop small spoonfuls of batter onto the pan to form mini pancakes.
- Cook 1–2 minutes per side until golden brown and cooked through.
