Step 1: Preheat & Prep
  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: Make the Batter
  1. In a bowl, mash the banana and mix in cottage cheese, vanilla extract, salt, and egg until smooth.
  2. Stir in powdered peanut butter and oats until combined.
  3. Fold in chocolate chips.
Step 3: Bake
  1. Scoop the mixture onto the prepared baking sheet (about 2 tbsp per cookie).
  2. Bake for 10–12 minutes or until edges are set and tops are slightly golden.
