Instructions
Step 1: Preheat & Prepare
- Preheat your oven to 180°C (350°F).
- Grease and line a round cake tin with parchment paper.
Step 2: Mix the Batter
- In a bowl, whisk together ricotta, eggs, sugar, vanilla, lemon zest, and lemon juice until smooth.
- Gently fold in ground almonds, baking powder, and salt until well combined.
Step 3: Bake
- Pour the batter into the prepared cake tin and smooth the top.
- Bake for 35–40 minutes until golden brown and a skewer comes out clean.
Step 4: Cool & Serve
- Allow to cool completely before removing from the tin.
- Dust with powdered sugar before serving.
