Cheesesteak Tortellini in Rich Provolone Sauce

Instructions

Step 1: Cook the Tortellini
  1. Boil tortellini according to package instructions. Drain and set aside.
Step 2: Sauté the Steak and Vegetables
  1. Heat olive oil in a skillet over medium-high heat.
  2. Add sliced steak and cook for 2–3 minutes until browned. Remove from the skillet and set aside.
  3. In the same skillet, add onions, bell peppers, and garlic. Sauté until soft, about 3–4 minutes.
Step 3: Prepare the Provolone Sauce
  1. In the same skillet, melt butter and stir in flour. Cook for 1 minute.
  2. Gradually whisk in heavy cream and beef broth, stirring until smooth.
  3. Add shredded provolone cheese, salt, black pepper, and red pepper flakes. Stir until melted and creamy.
Step 4: Combine & Serve
  1. Return the cooked steak and tortellini to the skillet. Toss to coat in the sauce.
  2. Garnish with fresh parsley if desired and serve warm.
