Step 1: Prepare the Batter
  1. In a bowl, whisk together the eggs and sugar until pale and fluffy.
  2. Gently fold in the flour, vanilla extract, and baking powder.
Step 2: Air Fry the Sponge
  1. Preheat your air fryer to 320°F (160°C).
  2. Line the air fryer basket with parchment paper.
  3. Pour the batter into the lined basket, spreading evenly.
  4. Air fry for 8–10 minutes, or until the sponge is golden and springs back when touched.
Step 3: Assemble the Roulade
  1. Transfer the sponge to a clean tea towel and gently roll it up while warm. Let it cool for 5 minutes.
  2. Unroll the sponge and spread raspberry jam evenly over the surface.
  3. Sprinkle fresh raspberries on top.
  4. Carefully roll the sponge back up into a roulade.
Step 4: Serve & Enjoy
  1. Dust with powdered sugar and serve with whipped cream, if desired.
