Step 1: Prepare the Batter
- In a bowl, whisk together the eggs and sugar until pale and fluffy.
- Gently fold in the flour, vanilla extract, and baking powder.
Step 2: Air Fry the Sponge
- Preheat your air fryer to 320°F (160°C).
- Line the air fryer basket with parchment paper.
- Pour the batter into the lined basket, spreading evenly.
- Air fry for 8–10 minutes, or until the sponge is golden and springs back when touched.
Step 3: Assemble the Roulade
- Transfer the sponge to a clean tea towel and gently roll it up while warm. Let it cool for 5 minutes.
- Unroll the sponge and spread raspberry jam evenly over the surface.
- Sprinkle fresh raspberries on top.
- Carefully roll the sponge back up into a roulade.
Step 4: Serve & Enjoy
- Dust with powdered sugar and serve with whipped cream, if desired.
