Step 1: Prepare the Filling
  1. Preheat a pan over medium heat. Add oil and sauté onions, carrots, and garlic for 3–4 minutes until soft.
  2. Add diced lamb, season with salt and pepper, and cook for 5 minutes until browned.
  3. Sprinkle flour over the lamb and stir for 1 minute to coat.
  4. Pour in stock and Worcestershire sauce, add thyme, and simmer for 10 minutes until thickened.
Step 2: Assemble the Hotpot
  1. Transfer the lamb mixture into an oven-safe dish that fits in your air fryer.
  2. Layer the thinly sliced potatoes over the top, slightly overlapping.
  3. Brush with melted butter and sprinkle with a little salt and black pepper.
Step 3: Air Fry
  1. Preheat air fryer to 375°F (190°C) for 3–5 minutes.
  2. Place the dish in the air fryer and cook for 35–40 minutes, until the potatoes are golden and crisp.
  3. If the potatoes brown too quickly, cover loosely with foil for the first 20 minutes, then uncover.
Step 4: Serve & Enjoy
  • Let it rest for 5 minutes before serving.
  • Serve with steamed greens or crusty bread for a complete meal.
