Step 1: Prepare the Filling
- Preheat a pan over medium heat. Add oil and sauté onions, carrots, and garlic for 3–4 minutes until soft.
- Add diced lamb, season with salt and pepper, and cook for 5 minutes until browned.
- Sprinkle flour over the lamb and stir for 1 minute to coat.
- Pour in stock and Worcestershire sauce, add thyme, and simmer for 10 minutes until thickened.
Step 2: Assemble the Hotpot
- Transfer the lamb mixture into an oven-safe dish that fits in your air fryer.
- Layer the thinly sliced potatoes over the top, slightly overlapping.
- Brush with melted butter and sprinkle with a little salt and black pepper.
Step 3: Air Fry
- Preheat air fryer to 375°F (190°C) for 3–5 minutes.
- Place the dish in the air fryer and cook for 35–40 minutes, until the potatoes are golden and crisp.
- If the potatoes brown too quickly, cover loosely with foil for the first 20 minutes, then uncover.
Step 4: Serve & Enjoy
- Let it rest for 5 minutes before serving.
- Serve with steamed greens or crusty bread for a complete meal.
