Step 1: Sear the Beef
- Preheat a pan over high heat.
- Pat the beef dry, season with salt and pepper, and sear for 1–2 minutes per side until browned.
- Remove from heat, brush with Dijon mustard, and let it cool.
Step 2: Make the Mushroom Duxelles
- In the same pan, melt butter and sauté mushrooms, garlic, and thyme over medium heat.
- Cook until the mixture is soft and dry (~5 minutes). Set aside to cool.
Step 3: Assemble the Wellington
- Lay plastic wrap on a flat surface. Place prosciutto slices slightly overlapping.
- Spread the mushroom mixture over the prosciutto, then place the beef fillet on top.
- Roll it tightly using the plastic wrap, securing the shape. Chill for 15 minutes.
Step 4: Wrap in Puff Pastry
- Roll out puff pastry and place the wrapped beef in the center.
- Fold the pastry around it, sealing the edges. Brush with egg wash.
- Chill for 10 minutes for better crispiness.
Step 5: Air Fry
- Preheat air fryer to 400°F (200°C) for 3–5 minutes.
- Place the wrapped Wellington in the air fryer basket seam-side down.
- Air fry at 375°F (190°C) for 20–25 minutes, or until the pastry is golden and crisp.
- For medium-rare: The internal temperature should be 125°F (52°C) when removed. Let it rest for 10 minutes before slicing.
Step 6: Serve & Enjoy
- Slice and serve with gravy, mashed potatoes, or a red wine sauce.
