Step 1: Prepare the Pie Crust
- Roll out the pie dough on a lightly floured surface to about 1/8-inch thickness.
- Transfer the dough to a pie plate, trimming the edges and crimping them.
- Refrigerate the crust for 30 minutes to firm up.
Step 2: Blind Bake the Crust
- Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
- Line the chilled pie crust with aluminum foil and fill it with pie weights or dried beans.
- Air fry for 10-12 minutes until the edges are lightly golden.
- Remove the foil and weights, then set the crust aside.
Step 3: Prepare the Filling
- In a saucepan, whisk together sugar and cornstarch.
- Gradually add milk, stirring until smooth.
- Heat over medium, stirring constantly, until the mixture thickens and bubbles (about 2 minutes).
- Remove from heat and stir in butter and vanilla extract until smooth.
Step 4: Assemble and Bake
- Pour the filling into the pre-baked pie crust.
- Sprinkle ground cinnamon evenly over the top.
- Return to the air fryer and bake at 375°F (190°C) for 12-15 minutes, until the pie is set and golden brown.
Step 5: Cool and Serve
- Let the pie cool on a wire rack before refrigerating for at least 2 hours.
- Slice and enjoy!
