Step 1: Prepare the Potato Mixture
- In a large mixing bowl, combine the cooked and cubed russet potatoes, diced bacon, diced green onions, sour cream, salt, and pepper.
- Mash the mixture with a potato masher or fork until mostly smooth, leaving a few small potato chunks for texture.
Step 2: Stuff and Shape the Potato Sticks
- Cut the block of cheddar cheese into ¼-inch thick strips.
- Take a spoonful of the potato mixture and flatten it in your palm. Place a strip of cheddar cheese in the center and wrap the potato mixture around it, forming a ball or stick. Make sure the cheese is fully covered.
- Repeat until all the potato mixture is used.
Step 3: Set Up the Coating Stations

- Prepare three bowls:
- Bowl 1: Flour.
- Bowl 2: Beaten eggs.
- Bowl 3: A mixture of cornstarch and panko breadcrumbs.
- Roll each potato stick in flour, dip it in the beaten egg, and coat it in the panko breadcrumb mixture.
Step 4: Air Fry the Potato Cheese Sticks
- Preheat the air fryer to 375°F (190°C) for 3-5 minutes. Lightly spray the air fryer basket with cooking spray.
- Arrange the coated potato sticks in a single layer in the air fryer basket, ensuring they don’t touch. Spray them lightly with cooking spray for added crispiness.
- Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
Step 5: Serve and Enjoy
- Let the potato cheese sticks cool for a few minutes before serving, as they will be very hot inside. Enjoy them as a snack or appetizer with your favorite dipping sauce!
