Instructions
1. Preheat and Prepare the Air Fryer
- Preheat your air fryer to 160°C (320°F) for 5 minutes.
- Line the air fryer baking pan or tray with parchment paper.
2. Prepare the Cake Batter
- Mix flour, cocoa powder, and salt in a bowl. Set aside.
- Separate egg whites and yolks into two bowls.
- Whisk egg whites until foamy, then gradually add 32g sugar, whisking until stiff peaks form.
- In the second bowl, beat egg yolks with 64g sugar until thick and pale.
- Fold in the dry mixture and egg whites alternately into the yolks, being careful not to deflate the mixture.
3. Bake the Cake
- Pour batter into the prepared pan and smooth evenly.
- Place the pan in the air fryer and bake for 10–12 minutes, checking for doneness with a toothpick.
- Transfer the baked cake onto parchment paper, invert, and peel off the liner. Trim edges neatly and roll it into a log using the parchment paper. Let it cool.
4. Make the Filling

- Beat double cream, powdered sugar, vanilla extract, and salt until stiff peaks form. Refrigerate.
- Once the cake is cooled, unroll, spread the filling, and re-roll it without the parchment paper. Chill for 1 hour.
5. Prepare the Frosting
- Beat butter until smooth. Gradually add powdered sugar, cocoa powder, and salt. Mix until creamy.
- Add vanilla and double cream, blending to a smooth consistency.
6. Decorate the Cake
- Spread the frosting evenly over the log. Use a fork to create bark-like texture. Pipe buttercream rings on the ends for a tree trunk effect.
- Decorate with Christmas-themed garnishes and dust with powdered sugar.
