Air Fryer Yule Log Cake

Instructions

1. Preheat and Prepare the Air Fryer

  • Preheat your air fryer to 160°C (320°F) for 5 minutes.
  • Line the air fryer baking pan or tray with parchment paper.

2. Prepare the Cake Batter

  • Mix flour, cocoa powder, and salt in a bowl. Set aside.
  • Separate egg whites and yolks into two bowls.
  • Whisk egg whites until foamy, then gradually add 32g sugar, whisking until stiff peaks form.
  • In the second bowl, beat egg yolks with 64g sugar until thick and pale.
  • Fold in the dry mixture and egg whites alternately into the yolks, being careful not to deflate the mixture.

3. Bake the Cake

  • Pour batter into the prepared pan and smooth evenly.
  • Place the pan in the air fryer and bake for 10–12 minutes, checking for doneness with a toothpick.
  • Transfer the baked cake onto parchment paper, invert, and peel off the liner. Trim edges neatly and roll it into a log using the parchment paper. Let it cool.

4. Make the Filling

  • Once the cake is cooled, unroll, spread the filling, and re-roll it without the parchment paper. Chill for 1 hour.

5. Prepare the Frosting

  • Beat butter until smooth. Gradually add powdered sugar, cocoa powder, and salt. Mix until creamy.
  • Add vanilla and double cream, blending to a smooth consistency.

6. Decorate the Cake

  • Spread the frosting evenly over the log. Use a fork to create bark-like texture. Pipe buttercream rings on the ends for a tree trunk effect.
  • Decorate with Christmas-themed garnishes and dust with powdered sugar.
