Step 1: Prepare the Fritter Mixture
- Grate the butternut squash and potato into a large mixing bowl.
- Add eggs, flour, cornstarch, cheddar cheese, parsley, smoked paprika, cumin, salt, and pepper. Mix until evenly combined.
Step 2: Preheat the Air Fryer
- Preheat your air fryer to 375°F (190°C) for 3–5 minutes.
- Line the air fryer basket with parchment paper or lightly grease it with cooking spray.
Step 3: Shape and Air Fry the Fritters
- Scoop about 2 tablespoons of the fritter mixture, form it into a patty, and place it in the air fryer basket.
- Leave space between the fritters for proper air circulation (cook in batches if necessary).
- Lightly spray the tops of the fritters with cooking spray.
- Air fry at 375°F (190°C) for 12–15 minutes, flipping halfway through, until golden brown and crispy.
Step 4: Prepare the Garlic Dip
- In a bowl, mix the low-fat quark and milk until smooth.
- Add garlic, agave syrup, salt, pepper, and chives. Stir well and refrigerate until ready to serve.
Step 5: Serve and Enjoy
- Remove the fritters from the air fryer and let them cool slightly on a wire rack.
- Serve warm with the garlic dip on the side.
Notes
- Batch Cooking: If cooking in batches, keep the finished fritters warm in an oven preheated to 200°F (90°C).
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for a few minutes before serving.
