Step 1: Prepare the Fritter Mixture

  1. Grate the butternut squash and potato into a large mixing bowl.
  2. Add eggs, flour, cornstarch, cheddar cheese, parsley, smoked paprika, cumin, salt, and pepper. Mix until evenly combined.

Step 2: Preheat the Air Fryer

  1. Preheat your air fryer to 375°F (190°C) for 3–5 minutes.
  2. Line the air fryer basket with parchment paper or lightly grease it with cooking spray.

Step 3: Shape and Air Fry the Fritters

  1. Scoop about 2 tablespoons of the fritter mixture, form it into a patty, and place it in the air fryer basket.
  2. Leave space between the fritters for proper air circulation (cook in batches if necessary).
  3. Lightly spray the tops of the fritters with cooking spray.
  4. Air fry at 375°F (190°C) for 12–15 minutes, flipping halfway through, until golden brown and crispy.

Step 4: Prepare the Garlic Dip

  1. In a bowl, mix the low-fat quark and milk until smooth.
  2. Add garlic, agave syrup, salt, pepper, and chives. Stir well and refrigerate until ready to serve.

Step 5: Serve and Enjoy

  1. Remove the fritters from the air fryer and let them cool slightly on a wire rack.
  2. Serve warm with the garlic dip on the side.
