For the Fritters:
- 250 g grated butternut squash (peeled and seeded)
- 1 grated potato (about 1 small to medium potato, peeled)
- 2 eggs
- 50 g all-purpose flour
- 50 g cornstarch (for extra crispiness)
- 100 g shredded cheddar cheese
- 2 tbsp chopped fresh parsley
- 1 tsp smoked paprika
- 1 tsp ground cumin
- Salt and pepper to taste
- Cooking spray or a light brush of vegetable oil
For the Garlic Dip:
- 200 g low-fat quark
- 50 ml milk
- 1 garlic clove, finely minced
- 1 tsp agave syrup
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp fresh chives, finely chopped
