  • 250 g grated butternut squash (peeled and seeded)
  • 1 grated potato (about 1 small to medium potato, peeled)
  • 2 eggs
  • 50 g all-purpose flour
  • 50 g cornstarch (for extra crispiness)
  • 100 g shredded cheddar cheese
  • 2 tbsp chopped fresh parsley
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Cooking spray or a light brush of vegetable oil

For the Garlic Dip:

  • 200 g low-fat quark
  • 50 ml milk
  • 1 garlic clove, finely minced
  • 1 tsp agave syrup
  • 1/2 tsp salt
  • 1/4 tsp pepper
