Air Fryer Mexican Street Corn Pasta Salad

Instructions

 

  • Cook the Pasta:
    • Cook the pasta according to the package directions. Once done, drain and toss with 1 tablespoon of olive oil to prevent sticking. Set aside.
  • Char the Corn:
    • Preheat your air fryer to 400°F (200°C).
    • Toss the drained corn kernels with the remaining 1 tablespoon of olive oil.
    • Spread the corn in a single layer in the air fryer basket. Air fry for 8-10 minutes, shaking the basket halfway through, until the corn is lightly charred. Set aside to cool.
  • Cook the Turkey Bacon:
    • Arrange the turkey bacon strips in the air fryer basket. Cook at 375°F (190°C) for 6-8 minutes or until crispy. Once done, remove and chop roughly. Set aside.
  • Assemble the Salad:
    • In a large bowl, combine the cooked pasta, charred corn, diced avocado, sliced green onions, chopped cilantro, diced jalapeño, chopped turkey bacon, crumbled feta cheese, and drained black beans.
  • Prepare the Dressing:
    • In a separate bowl, whisk together the mayonnaise, lime juice, ground cumin, paprika, chili powder, and hot sauce. Season with salt and pepper to taste.
  • Combine and Serve:
    • Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
