- Prepare the Butterscotch Filling:
- In a saucepan or the top of a double boiler, combine the light brown sugar, cornstarch, salt, and milk.
- Cook over medium heat, stirring constantly, until the mixture begins to thicken. This should take about 15-20 minutes.
- Once thickened, whisk in the beaten egg yolks and continue cooking and stirring until the filling is fully thickened and smooth.
- Add the Finishing Touches:
- Remove the filling from heat and stir in the butter and vanilla extract until fully incorporated.
- Preheat the Air Fryer:
- Preheat your air fryer to 375°F (190°C) for 3 minutes.
- Assemble the Pie:
- Pour the prepared butterscotch filling into the pre-baked pie crust.
- Air Fry the Pie:
- Place the pie carefully into the air fryer basket.
- Air fry at 375°F (190°C) for about 5-8 minutes, or until the top of the pie begins to brown lightly.
- Cool and Serve:
- Remove the pie from the air fryer and let it cool to room temperature. The filling will continue to set as it cools.
- Slice and serve once the pie is fully cooled.
