Instructions
Prepare the Air Fryer:
- Preheat your air fryer to 320ºF (160ºC). Line a small air fryer-safe baking dish with parchment paper or aluminum foil.
2. Mix Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, 1 tablespoon lemon zest, baking powder, and salt until combined.
3. Add Wet Ingredients:
- Mix in the melted butter, 1/4 cup lemon juice, eggs, and 1 teaspoon vanilla extract until just incorporated.
4. Pour Batter:
- Pour the batter into the prepared baking dish, spreading it evenly.
5. Air Fry:

- Place the dish in the preheated air fryer and bake at 320ºF (160ºC) for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
6. Cool:
- Remove the dish from the air fryer and let the lemonies cool in the dish for about 10-15 minutes.
7. Prepare the Glaze:
- While the lemonies are cooling, whisk together the powdered sugar, 2 tablespoons lemon juice, 1 teaspoon lemon zest, and 1 teaspoon vanilla extract (if using) until smooth.
8. Glaze the Lemonies:
- Once the lemonies have cooled, pour the glaze over them and spread it evenly. Let the glaze set for a few minutes.
9. Serve:
- Cut into squares and enjoy your Homemade Lemonies!
